What a difference a trip makes.

Vietnamese food wasn’t one of our favorite cuisines before our first lengthy trip to Vietnam two years ago, but now it sits close to the top, behind perhaps only Japanese. Back then, I only really knew about banh mi and pho and I wasn’t even that big a fan of noodles.

Today, after two visits, including a recent month-long trip exploring the country’s cuisine from north to south, I have become a Vietnamese food addict. Two of my poisons of choice include bun bo hue and hu tieu – soup-based dishes that I couldn’t get enough of while I was there.
